About the Chef

Takuya Matsuda, originally from Mie Prefecture, has dedicated more than 25 years to mastering and evolving the art of Japanese cuisine. In his youth, he moved to the United States alone, where his experiences in the fashion industry and his work as a graphic designer sharpened his unique aesthetic sensibility. This refined sense of beauty is expressed throughout his cuisine—from plating to spatial presentation—bringing depth, artistry, and a distinctive worldview to his dishes.

While honoring the traditions of Japanese cuisine, Matsuda continuously seeks out new culinary trends and techniques, allowing his craft to evolve. His commitment to excellence is reflected in his regular visits to markets across Japan every few months, where he personally examines the quality of seasonal fish and ingredients. He has also visited more than 50 sake breweries, studying their philosophies and regional characteristics to deepen his understanding of sake and elevate the harmony between sake and food.

With numerous awards from culinary competitions and experience as a judge, Matsuda has relentlessly pursued both tradition and innovation. Inspired by Cirque du Soleil, he developed a unique style of “Theatrical Omakase,” integrating captivating performance elements into the dining experience. His approach engages all five senses—taste, sight, sound, emotion—creating a dining experience that feels like a live stage performance.

Matsuda opened the first Okeya location in Montreal in 2020, which was selected for Quebec’s inaugural Michelin Selection in 2025. The second location in Vancouver, opened in 2022, earned a Michelin star in just one year. The Toronto location, opened in 2024, was also selected for the Michelin Guide within its first year. Okeya continues to receive high praise across multiple cities.
